Roasted Tomato and Goat Cheese Toast

When I posted this picture of my afternoon snack on my Instagram stories the other day, I really did not expect such a big response! While this toast looks really impressive, it is super easy to make! Plus, with tomato season upon us in Ohio, it’s only a matter of time until every farmer’s market stand is bursting with cherry tomatoes. This is an awesome recipe to make when you’re tomatoes are going to go bad tomorrow and you’re not in the mood for another salad.

Ingredients:

Crunchy bread (sourdough is my favorite!)

Spreadable Goat Cheese

Cherry Tomatoes (use as much as a little you’d like depending on your toast size)

Olive Oil

Red Pepper Flakes

Garlic (I used two cloves for a pint of tomatoes)

Honey

Instructions:

Preheat your oven to 400 degrees.

Add your cherry tomatoes to a small cookie sheet or baking dish. Toss them in some olive oil and add a sprinkle of red pepper flakes and minced garlic. Bake for 10-15 minutes or until all the tomatoes are wrinkled and burst.

Meanwhile, toast your bread and spread a layer of goat cheese.

Top toast with your roasted tomatoes and finish them with a drizzle of honey for the perfect touch of sweetness.

Heres some adaptation ideas if you’re missing an ingredient or want to make a swap!

Try this recipe on ciabatta bread, a baguette or a focaccia instead of sourdough.

While I love goat cheese I know it’s not everyone’s favorite! Try this recipe with cream cheese, ricotta, or mascarpone instead for a similar texture and flavor.

Cherry tomatoes are the way to go with this recipe, I used basic red ones but heirloom tomatoes would also look beautiful!
